Hola, mis amigos!!
So, its finally spring break!!(: If you are anything like me, this is a source of great excitement!  I get to hang out with friends, no homework, possibly a later curfew?? Who knows? A girl can always hope.  I got to kick the week off with a lovely night of ice skating with Taylor and Camden!  Also, this means I have a lot of time for making things!! I love to cook! This week in Spanish, we had to research five recipes from  a Spanish speaking country.  My country I was assigned was El Salvador!  So if you guys would like to try it, here is the recipe! Its one of the simplest things ever to make and you can make it all from scratch!!

Salvadoran Breakfast Cakes

Ingredients:
1 cup of rice flour (as long as it doesn't say self rising, you're good)
1 teaspoon baking powder
1 pinch of salt
1 cup of softened butter
1 cup of sugar
Salvadoran Breakfast Cake (a.k.a. Quesadillas)3 large eggs
1 cup of sour cream
1/2 cup grated hard chees (cojita or parmesan)
Sesame Seeds to Taste

Instructions:
  1. Preheat the oven to 350F.
  2. Meanwhile, whisk together the rice flour, baking powder, and salt. Then, in the bowl of a standing mixer, cream the butter with sugar. Drop in the eggs, one at a time, until fully incorporated. Scrape down the sides as needed.
  3. Next beat in the sour cream, cheese, and rice flour mixture until a smooth batter forms.
  4. Spoon into greased muffin tins, filling each one 4/5th of the way up (this batter does not rise much). Sprinkle on the sesame seeds, to taste.
  5. Bake for 15-20 minutes. Let cool to room temperature - it'll taste like a cheesy pound cake.

Now I cant take all credit for this recipe.  I got it from Food52.com.  This website has several yummy recipes I recommend trying! Let me know what you think of this recipe! Im interested in hearing!
Peace out, Girl Scouts!!
